&amp;nbsp;One minute it's summer-like hot, next minute, must-wear-a- jacket-like cold. &amp;nbsp;It makes it hard for me to decide what to cook, too. &lt;br /&gt;&lt;br /&gt;And of course, on the day like today, lamb stew would be perfect, but I just went grocery shopping yesterday, and I don't have anything that I can make stew with.... &lt;br /&gt;&lt;br /&gt;But tomorrow, I will definitely go grocery shopping again and make this stew! font-family: arial, sans-serif; font-size: 13px;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="background-color: white; font-family: arial, sans-serif; font-size: 13px;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="background-color: white; font-family: arial, sans-serif; font-size: 13px;"&gt;Mix together in a small bowl the following:&lt;br /&gt;&lt;br /&gt;1 cup flour&lt;br /&gt;3/4 teaspoon salt&lt;br /&gt;3/8 teaspoon baking soda&lt;br /&gt;&lt;br /&gt;Mix in a large bowl, using mixer and beaters mix until fluffy:&lt;br /&gt;&lt;br /&gt;1 stick of butter, softened to room temperature&lt;br /&gt;1/2 cup of white sugar&lt;br /&gt;1/3 cup of brown sugar&lt;br /&gt;&lt;br /&gt;Add one egg, and 1 teaspoon of vanilla.&amp;nbsp; Beat well.&lt;br /&gt;&lt;br /&gt;Add the small bowl of flour, salt, and soda to the large bowl and mix until just combined.&lt;br /&gt;&lt;br /&gt;Mix in one full bag of chocolate chips (approx. 2 cups) and some nuts, if you like.&lt;br /&gt;&lt;br /&gt;Let the dough chill in the fridge for 2-24 hours.&amp;nbsp; To bake, make small round balls of the dough on a baking sheet and bake at 350 degrees for 12 minutes, until cookies are just golden brown around edges.&amp;nbsp; Let stand on cookies sheet about 10 minutes before removing with a spatula. &amp;nbsp;&amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://4.bp.blogspot.com/-FZNCMbZ3qB8/TocXXZv1wPI/AAAAAAAAAMk/MhZWKkxGvCE/s1600/risotto5.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="640" src="http://4.bp.blogspot.com/-FZNCMbZ3qB8/TocXXZv1wPI/AAAAAAAAAMk/MhZWKkxGvCE/s640/risotto5.jpg" width="424" /&gt;&lt;/a&gt;&lt;/div&gt;I also added chopped up tomato (I only had a yellow tomato at that time), poured some white wine, and&lt;br /&gt;then, gorgonzola cheese. &amp;nbsp;Mmmm....&lt;br /&gt;&lt;br /&gt;At this point, there is a good amount of tasty liquid produced from the fresh shiitake mushrooms, tomato, and the brown water from dried porcini mushrooms, and I just added about 1 1/2 cups of quinoa and let it simmer covered until quinoa sucks up the liquid and turned nice and fluffy. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Just like potato chips, this Brazilian Cheese Bread is something you cannot just have one of. &amp;nbsp;You can't help eating at least 3 or 4. &amp;nbsp;Or even more. &amp;nbsp;They are called "Pao de Queijo" in Portugese, and the first time I had them was about 10 years ago at some Brazilian restaurant in Manhattan. &amp;nbsp;I specifically remember how good it smelled especially when it was fresh out of the oven. &amp;nbsp;The smell of melted cheese was incredibly appetizing, and it was crispy outside, but chewy inside...basically I fell in love. &amp;nbsp;Then about a year go, my family was invited to a birthday party of a Brazilian girl who just turned one, and there were tons of &lt;i&gt;pao de queijo&lt;/i&gt;! &amp;nbsp;So&amp;nbsp;I asked the mother of the birthday girl how to make them, and she told me Brazilian grocery stores sell easy pao de queijo mix in Queens. &amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;The problem is, I can't bother going all the way to a Brazilian grocery store in Queens. &amp;nbsp;I live in Brooklyn, don't have a car, have a little child, and taking subways to Queens is not ideal. &amp;nbsp;So I looked up &amp;nbsp;some recipe online, and by following several recipes, I came up with my own ingredients and measurements to make my version of pao de queijo. &amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; In sauce pan, heat up milk and canola oil and turn off heat right before boiling&lt;br /&gt;2. Add milk and canola oil into tapioca flour, and stir well. &lt;br /&gt;3. Knelt until it forms dough and add egg and cheese. &lt;br /&gt;4. Here are what I used besides lots of spinach; garlic, onion, ginger,&amp;nbsp;coriander, mild curry powder, cumin, cilantro, Greek yogurt, and firm tofu. &amp;nbsp;I really wanted to use garam masala to add a spicy kick to this dish, but I wanted my little one to try it too, so I chose not to. &amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://4.bp.blogspot.com/-VfeqFkW5SkU/TnYbiTUdicI/AAAAAAAAALQ/YAMe7kZeIKw/s1600/saag5.jpg" imageanchor="1" style="margin-left: 1em; text-align: left;"&gt;So I was going to boil black eye peas and lentils together, but I figured lentils would make the texture of burger too soggy, so I decided not to use them at last minute. &amp;nbsp;So just peas only, I cooked them down until soft, but not too soft. &amp;nbsp;It is the same reason for not using lentils. &amp;nbsp;It would be hard to make burgers if the texture of peas are too soft. &amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;While the peas were being cooked, I sauteed onion and garlic, and chopped fresh parsley. &amp;nbsp;Once the peas &amp;nbsp;were cooked, I mashed them with a spoon. &amp;nbsp;Then, I added the rest of ingredients, which are sauteed onion, garlic, chopped fresh parsley, oatmeal, and I also added an egg (it's optional. &amp;nbsp;You can make it without egg, too). &amp;nbsp;It was such a great idea to add oatmeal because it is dry so it sucked all the moisture, and with an egg, they helped to make burger patties easily. &amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&amp;nbsp;&amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Once I made patties, now it's time to cook them. &amp;nbsp;I wish I had a&amp;nbsp;barbecue grill, but I don't, so I pan fried them with olive oil. &amp;nbsp;Here, using high heat is very important. &amp;nbsp;By making the surface of the patty crispy, it holds the shape together, and it doesn't crumble. &amp;nbsp;&amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; I dressed the burger with toasted brioche, a thick slice of tomato, onion, and arugula. &amp;nbsp;It was such a tasty burger! &amp;nbsp;It was so tasty that I wanted Samuel Jackson from Pulp Fiction try it and tell me what he thinks. &amp;nbsp;&lt;/div&gt;&lt;div class="separator" style="clear: both; Shred zucchini and carrot in the food processor (if you don't have it, chop them up well) and by squeezing by hand, make sure drain the water well.&lt;br /&gt;&lt;br /&gt;2. Sift flour, and bp, add sugar, 1., and mix them well.&lt;br /&gt;&lt;br /&gt;3. In a different bowl, beat eaggs then add olive oil.&lt;br /&gt;&lt;br /&gt;4. Add 3 to 2, add cheese, and stir well. &lt;br /&gt;&lt;br /&gt;5. float: right; margin-bottom: 1em; margin-left: 1em;"&gt;&lt;img border="0" height="400" src="http://2.bp.blogspot.com/-4nWN-95X8bg/Tk1SKycSEZI/AAAAAAAAAIo/dmFqZ-TAviU/s400/zuc6.jpg" width="162" /&gt;&lt;/a&gt;To me, cooking is very therapeutic. &amp;nbsp;It was a little bit of time consuming to make these little zucchini cups with my limited cooking tools, which were a regular table knife, a clam knife, and my hands, but it was a mindless process, and I didn't mind it at all. &amp;nbsp;I need time like that sometimes, especially when I am dealing with my super active son, who wears me out by 10 o'clock every morning. &amp;nbsp;And I do things like this while he takes a nap in the middle of the day. &amp;nbsp;I don't hear him screaming, no throwing balls, and no swinging baseball bat...just making the zucchini cups in silence was so nice and peaceful that it felt almost zen-like. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://3.bp.blogspot.com/-KV3CBKyXbWo/Tku4IHAM7GI/AAAAAAAAAIM/zAieG17_9To/s1600/garlic.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="640" src="http://3.bp.blogspot.com/-KV3CBKyXbWo/Tku4IHAM7GI/AAAAAAAAAIM/zAieG17_9To/s640/garlic.jpg" width="424" /&gt;&lt;/a&gt;&lt;/div&gt;I wish I could share the recipe of my original salad dressing, but I didn't measure anything...I just used my feeling, senses, and by tasting and adjusting the flavor little by little, I somehow made up the dressing, and it was damn good. &amp;nbsp;As far as the ingredients, I used roasted sesame, tahini sauce, sugar, soy sauce, vinegar, sesame oil, canola oil, sugar, water, and spicy garlic chili sauce. &amp;nbsp;In the near future, maybe I will try to make the same dressing and will update this post to share the recipe... &lt;br /&gt;&lt;br /&gt;And the kicker of this salad was the garlic chips! &amp;nbsp;I simply sliced garlic and panfried them in olive oil. &amp;nbsp;If you try this, make sure you use low heat! &amp;nbsp;As you know garlic tends to burn so quickly so yo don't want to use high heat.&lt;br /&gt;&lt;br /&gt;Now, what I did with the tuna was lightly marinated it in soy sauce and sake. &amp;nbsp;Then I seared the surface with leftover oil from making garlic chips for about 5 seconds on each side (yes, only 5 seconds!) and let it cool down. &amp;nbsp;This gives a really nice garlicky flavor to the tuna. &lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; But these peaches were already very sweet, so why should I bother adding sugar to ruin its real peachy flavor ? &amp;nbsp;So I just simply crushed the peaches into small pieces by squeezing them with my hands, and boiled them until they got soft and liquidy. &amp;nbsp;Then I put it into the food processor just a little bit to make it smooth. &lt;br /&gt;&lt;br /&gt;While the peach sauce was being chilled in the fridge, I made panna cotta. &amp;nbsp;The way panna cotta is made is usually with milk, heavy cream, skim milk, sugar, gelatine. &amp;nbsp;But once again, I twisted the traditional way of making panna cotta in my own way. &amp;nbsp;I added yogurt, and reduced the amount of heavy cream and milk.&lt;br /&gt;&lt;br /&gt;Here's how I made my panna cotta.&lt;br /&gt;&lt;br /&gt;Yogurt (I used 0% fat greek yogurt) 150 ml&lt;br /&gt;Heavy Cream 200 ml&lt;br /&gt;Milk &amp;nbsp;150 ml&lt;br /&gt;Sugar &amp;nbsp;50 g&lt;br /&gt;Gelatine &amp;nbsp;8 g&lt;br /&gt;Water &amp;nbsp;50 ml&lt;br /&gt;Vanilla Extract &lt;br /&gt;&lt;br /&gt;Mix above ingredients in a saucepan, stir and heat until right before it starts boiling. &amp;nbsp;Turn off heat, add rum (3 tbs), and let it cool down. &amp;nbsp;Once it's cool enough, pour it into individual dessert cups, and keep in the refrigerator until cold. &lt;br /&gt;&lt;br /&gt;Add the peach sauce on top (I also put some in the bottom) and it is ready to be served. &lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://3.bp.blogspot.com/-ss-VvIwPOaM/TkffoRaDm9I/AAAAAAAAAHg/GDSuXlceEFw/s1600/panna.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="640" src="http://3.bp.blogspot.com/-ss-VvIwPOaM/TkffoRaDm9I/AAAAAAAAAHg/GDSuXlceEFw/s640/panna.jpg" width="424" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;&lt;br /&gt;So simple, so easy! &amp;nbsp;Lots of people find uni an acquired taste, but to me, it's a delicacy and I love it. &amp;nbsp;I like uni from California (to be specific, the ones from Santa Barbara or San Diego) much better than the one from Maine, which I find too "mediciney". font-family: Arial, Helvetica, sans-serif;"&gt;But kale and I got reunited a few days ago when I made sauteed kale with bacon and mushrooms. &amp;nbsp;At my local grocery store I found really nice applewood smoked, thick center-cut organic bacon with not so much fat on it, and wanted to make some nice dish. &amp;nbsp;I am not the biggest bacon fan by any means, but I appreciate a good quality one, and when I saw this bacon, I just had to grab it!&lt;/span&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; font-family: Arial, Helvetica, sans-serif;"&gt;Anyway, I boiled kale for about 3 minutes then chopped it finely. &amp;nbsp;Unlike spinach, kale is touch to chew, so by boiling and chopping finely my little one can also eat it easily. &amp;nbsp;Next, I sauteed a little bit of garlic in the pan with olive oil and added the nice chunks of bacon. &amp;nbsp;I also added a dash of white wine and balsamic vinegar, which brought out the bacon's smoky flavor. &amp;nbsp;Then, I added mushrooms and the chopped kale, sauteing until mushroom got nice and soft.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; &amp;nbsp;&lt;br /&gt;Why? &amp;nbsp;Because just a few days ago, I made awesome tomato sauce with juicy&amp;nbsp;ripe&amp;nbsp;tomatoes and I simply had urge to use it for making something. &lt;br /&gt;&lt;br /&gt;So here's how I made my untraditional vichyssoise:&lt;br /&gt;&lt;br /&gt;1. Boil potatoes, onions (that's right, I used onion instead of leek), a little bit of garlic, and add butter to water. &lt;br /&gt;2. Once potatoes become very soft, drain the hot water and puree the potatoes, onions, and garlic in a blender.&lt;br /&gt;3. Add tomato sauce, cream, milk, and salt. &lt;br /&gt;4.&amp;nbsp;Refrigerate&amp;nbsp;until cold.&lt;br /&gt;5. Add chopped tomatoes, boiled asparagus, and sprinkle fresh parsley. &lt;br /&gt;&lt;br /&gt;That's all. &amp;nbsp;Isn't it simple? &amp;nbsp;By adding tomato sauce, the dish gets a very pretty color and refreshing flavor, and I also liked the fact the soup was not too thick. &lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; Smash banana into small pieces with a fork&lt;/div&gt;&lt;div&gt;2. In a separate bowl, sift flour and baking powder, then add sugar. &amp;nbsp;&lt;/div&gt;&lt;div&gt;3. Add 1 into 2 and mix them well&lt;/div&gt;&lt;div&gt;4. Add beaten egg, yogurt, oil and mix them well.&amp;nbsp;&lt;/div&gt;&lt;div&gt;5. Pour the batter into a baking dish and place raspberries into the batter evenly (let raspberries sink into the batter)&lt;/div&gt;&lt;div&gt;6. Slice the rest of banana and place them on top of the batter.&amp;nbsp;&lt;/div&gt;&lt;div&gt;7. The restaurant specializes in pork dishes, and their fried rice is amazing! So I tried to make something similar to that dish. First of all, TONS OF GARLIC.  I fried them with sesame oil, and also added good amount of scallion and cilantro.  All the good stuff! Chilled pasta with tomatoes and anchovies, that is. Just sauté chopped garlic and anchovies with olive oil, pour some white wine, and add cut up tomatoes (I purposely cut tomatoes into big pieces since they were just so juicy), and simmer for a while. color: #333333; font-family: 'Trebuchet MS';"&gt;As I was flipping through the pages of a Japanese recipe book I borrowed from the Brooklyn Public Library, this dish stood out more than any other recipes. &amp;nbsp;Salmon burgers. &amp;nbsp;The interesting thing about this recipe is to make salmon burger with potatoes and pork. &amp;nbsp;Salmon with pork. &amp;nbsp;Salmon with pork...??? &amp;nbsp;Besides the fact that I only had salmon, not ground pork in my fridge, I somehow didn't want to mix those two. &amp;nbsp;So instead of using pork, I used oatmeal. &amp;nbsp;Turned out, it was such a brilliant idea. &amp;nbsp;Oatmeal made the burger nice and fluffy and it was not so heavy.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both;
